"This udon restaurant is on the Karuizawa Ginza Shopping Street in the Karuizawa section of Karuizawa Town. Their secret recipe ""kuro udon"" containing wheat husk and brown rice flour is fragrant with a chewy texture. They offer stewed and cold udon as well as a la carte dishes."

We have been going to this restaurant for over 10 years and the food here is excellent. The name of the restaurant is slightly deceiving as it implies that its Udon restaurant when in fact it is an...

This soba buckwheat noodle shop is on the Kitashinano Kudamono Highway in Nakamatsu, Obuse Town, Kamitakai County. Their soba is made from chemical-free, vegetable compost-grown buckwheat they raise themselves. Their Sanmai Soba set features three kinds of noodles that are served one after the other, including Namako-uchi Soba made with only buckwheat flour and water, Kawari Soba with a blend of seasonal ingredients, and Arahiki Soba. They also have a Soba Kaiseki course with a variety of soba dishes (reservations required).

Nagano Pref. Sakushi Iwamurada Kuho Minami West 2426-1
"A soba noodle restaurant located in Iwamurada, Saku City. The restaurant serves ""Mizumoe Soba,"" soba noodles made from buckwheat soaked in icy water that has just started to germinate, the point when the buckwheat is at its most delicious. The restaurant also serves ""Seiro Soba,"" soba noodles made with unhulled buckwheat from the Asama Highland served over a steaming basket; and ""Tebiki Soba,"" soba made with flour hand milled from unhulled Shinshu Nagawa buckwheat. Other menu selections include ""Nikoji Soba"" soup, a local dish; and simple soba kaiseki dishes."

This soba buckwheat noodle shop is located in Hokujo, Hakuba Village. At lunch they serve Juwari Soba in limited quantities made with 100% coarse ground Azumino-grown buckwheat and water from the Northern Alps, as well as soba noodles with broth poured over the top, tempura rice bowls, and more. In the evening they offer Nihachi Soba, noodles made with two parts udon flour to eight parts soba flour. They also have a la carte items made from local ingredients and select sake and shochu liquor from around Japan.

We were lucky to get a table just before they closed (after a 30-minute wait) . The food was simple yet delicious. We ordered horse sashimi, tempura and of course the soba.

"This soba buckwheat noodle shop is in Akashina Nakagawate, Azumino City. Made with water from the Northern Alps and carefully selected buckwheat flour, their soba noodles are nice and chewy and taste great going down. They offer a diverse menu with soba dishes like ""Morisoba,"" ""Tsukimi Soba,"" and ""Duck Nanban Soba"" (limited to five plates a day). They also have wild vegetable tempura in season."

"This soba noodle shop is at the Route 18 bypass in Nagakura, Karuizawa Town, Kitasaku County. Appearing refined and tranquil from the outside, they serve chewy soba noodles handmade from domestically-grown, stone-ground buckwheat flour in an atmosphere flowing with jazz. Their soba noodles and tempura are delicious, and their ""Kakiage Tsukesoba"" with shrimp and squid more than ten centimeters across is popular. Their udon and shrimp tempura rice bowls get good reviews, too."

This soba shop is on the Hokkaido Highway in Ueda City, Nagano Prefecture. Made with germinated buckwheat berries, the shopkeeper's original Hatsuga Soba has become famous, and many people stop by while touring Yanagimachi. The open, Japanese style interior can cater to groups, too. They close for the day when the soba noodles run out.

A reservation only soba noodle restaurant located in Fujimi Town, Suwa County, Nagano Prefecture which serves juwari soba noodles made with 100% homegrown buckwheat flour. The restaurant's menu, ruthlessly paired down to the bare minimum, consists of just mori-soba cold soba noodles and homemade pickles, and this popular establishment is frequented by soba-lovers from far and wide. Operating out of the living room of an old-fashioned Japanese home, diners can relax and enjoy their meal along with the restaurant's rural atmosphere.

A soba restaurant located in Achi Village, Shimoina County. Here you can enjoy vaunted, flavorful soba noodles made from buckwheat flour ground from unhulled kernels using a stone mill. The unique, silky texture of the noodles and the flavor of the restaurant's original tsuyu dipping sauce has won it much popularity. The restaurant is also adjoined by a farm-fresh shop. The shop sells local vegetables, fruits, and processed foods and is a great place to find a souvenir.

Nagano prefecture is an exciting mix of mountains, hot spring monkeys, and preserved Edo history. At the heart of the Japanese Alps, Nagano is one of the country’s most popular destinations, whether in winter for its snow sports and the much-loved Jigokudani Monkey Park or in the warmer months for discovering the undulating hills on foot. For fantastic Edo architecture, head to the Kiso Valley for a 60-kilometer stretch of quaint wooden buildings that marked the Nakasendo route 200 years ago.
