Since ingredients and cooking methods vary, depending on what shipments come in and what is available to harvest, customers like to come back again and again.     A river fish cuisine restaurant located a five-minute walk from JR Ueda Station. The first floor is a shop which sells local specialty products and foods made primarily with fish caught in the Chikuma River. On the second floor, the restaurant serves river fish cuisine, and customers can enjoy the tastes of the Chikuma River, such as umani sweet-stewed carp and shioyaki salt broiled river fish, alongside kotsuzake - hot sake served over broiled fish bones and fins. The restaurant's signature dish is its sweetfish ramen; this salt ramen's vaunted broth is made by slowly simmering wild-caught sweetfish. The ramen is topped with a grelled sweetfish with salt and sweetfish dumplings modeled after the Rokumonsen crest of the Sanada clan.

This well-reviewed restaurant serves colorful, seasonal vegetable dishes and traditional foods which honor the heritage of the Nagano area. Dedicated to the concept of slow food made with seasonal vegetables and traditional foods from northern Nagano, the all-you-can-eat buffet, which is stocked with over 20 dishes, is particularly recommended. For their rice, customers can choose between kinoko okowa mushrooms in rice or zakkokumai assorted grains in rice; the buffet also comes with a beverage and dessert.

    善光寺から徒歩数分で到着。お昼のビュッフェ前には既に行列が出来ています。12時にはもう満席です。 ご飯はきのこおこわと、雑穀米?が選べたかと思います。普通に美味しいです。 他の料理も味付けは基本的に薄味で胃もたれしません。天婦羅や唐揚げもあり、決してお野菜だけではないです。ただ、席は少し狭いかと思われますので僕みたいな大柄な人は注意したほうが良いですね(笑)

    This soba noodle restaurant, recently remodeled in 2017, has been a favorite of many since it first opened in 1990. Dedicated to preserving and sharing local cuisine, the restaurant serves soba noodles and sasazushi, popular local Tomikura dishes. Tomikura soba noodles make use of thistle fibers to hold them together. The restaurant's sasazushi has a rich flavor that isn't too sweet. Both are simple dishes whose flavor you will not tire of no matter how much you eat.

    飯山に行ったら「笹寿司」は絶対に食べるべき! 特に「かじか亭」がオススメです。 料金は少々高いけど、お蕎麦と笹寿司がとても美味しく、一度食べたら忘れられません。 一時、閉店しましたが、2017年4月27日にリニューアルオープンしました! 新しくなった「かじか亭」、行ってみようかな・・・
