Getting its fresh seafood from auctions in the market, Ichibazushi uses somewhat larger cuts of fish than usual, quickly and skillfully pressing them together with local sushi rice. The restaurant’s menu spans everything from standards to seasonal items, including blackthroat seaperch, horse mackerel, tuna, Japanese amberjack, mackerel, sweet shrimp, and more.     This is a rotating sushi shop known for its queues, located on the 6th floor of the shopping center facility “Kanazawa Forus,” just a short walk from JR Kanazawa Station. It boasts fresh seafood delivered directly from Noto and Kanazawa fishing ports. Visitors can enjoy authentic sushi easily with the carefully selected ingredients from the water to boil the rice, rice vinegar and soy sauce. Although being a sushi train, there is a wealth of seasonal toppings unique to the Hokuriku area such as black throat sea perch, sweet shrimp, botan shrimps, firefly squids, Japanese amberjack, and crab, etc. There are also many table seats, and it is convenient for families and groups.

    Get ready for the wait before getting a seat but you will get a great Sushi experience. Quality and freshness is there with the added value of entertaining kids. They loved it as much as we did.

Customers can also enjoy the restaurant’s superbly delicious arajiru seafood scrap miso soup, homemade using dozens of ingredients whose makeup differs each day, for free.

Daikoku-zushi is renowned for its nigiri-zushi and maki-zushi made with fresh, Hokuriku seafood such as blackthroat seaperch and sweet shrimp. The Ume Course is particularly popular and comes with 12 pieces of nigiri-zushi as well as maki-zushi chosen by the chef. The chef prepares the sushi in line with the speed of the diner, serving two pieces at a time. This popular restaurant is frequently visited by tourists and people on business trips to the area.

Their pride and joy may be the sushi rice which features a combination of Noto koshihikari rice with vinegar from a classic shop. With unique sweetness to enjoy, the liver is popular with sushi. Bounty of the ocean includes sweet shrimp, Iwagaki oyster, rockfish, crab. The restaurant's konbujime, an old fashioned sushi variety created in Kanazawa, has a unique flavor and texture created by securing Jonh Dory, Pacific cod, and red sea bream in wild konbu kelp. In addition to dining in, the restaurant also accepts takeout orders starting from just a single plate.

    We didnt have to wait at all when we came here for lunch. They had sushi sets that were good value and fresh. Their sushi train was good but a little pricey.

The sushi crafted by the owner, a master who has worked with sushi for over 30 years, is renowned not only for its freshness but also its size. Particularly recommended are the blackthroat seapearch, a high quality whitefish which is nevertheless characterized by its rich and flavorful fat, served shioyaki (salt grilled) and ichiyaboshi (salted and dried overnight) style; the homemade kaburazushi turnip sushi and kobujime konbu kelp sushi, only served in winter; and the vinegared whitebait sunomono.
