- Toyama Pref. Nantoshi Suganuma 906
- At this restaurant on the Shogawa River in the World Heritage Suganuma Gassho-zukuri Village, guests dine on traditional Gokayama cuisine in a gassho-zukuri steep-roofed house built about 200 years ago surrounded by the seasons. Take off your shoes as you enter to use their table or tatami mat floor seating. They have a traditional irori hearth, and time seems to pass slowly like long ago. The cuisine focuses on Japanese style gozen set meals packed with the natural goodness of Gokayama. They also offer à la carte items such as Gokayama soba noodles and deep-fried char. You can make reservations to view folk music traditions like kokiriko, the mugiya-kasa dance, and osayobushi performances.

- This restaurant offers noodles made from soba ground, kneaded, and boiled with heart. They use whole grain soba from Niigata and Fukui ground early every morning so that it doesn't lose fragrance, and quickly finish it into soba for fresh eating. We recommend the Zarusoba & Koagedashi meal set with agedashi fried tofu made with Gokayama tofu.

Hand-made chewy soba noodles were delicious! I appreciate that the soba noodles for warm soup dishes are thicker than the normal-width soba noodles in cold dishes. The reason is because once boiled...

Toyama Areas
Toyama is one of the three prefectures that house the Japanese Alps, with its southern and eastern borders comprising one long stretch of mountains, out of which the Tateyama Kurobe Alpine Route is forged. While traditional crafts fill the northern coastal cities of Toyama and Takaoka, thatched roof houses offer unrivalled views against a backdrop of fantastic scenery at Gokayama in the mountainous area in the south of the prefecture.
