- "This famous additive-free seafood and tonkotsu pork bone ramen restaurant is located in Takadanobaba. Customers love the complex flavor of the restaurant's rich ramen broth made by combining a slow-stewed pork and chicken bone broth with a flavorful seafood broth created using smoked mackerel and dried bonito shavings. The restaurant's medium-thick noodles are made in-house using several varieties of lye water from Mongolia; the extra-thick menma fermented bamboo shoots used as a topping add both a pleasant texture and visual impact. One particularly recommended topping is the ""ajitama,"" a gooey soft-boiled egg marinated in an ever-so-slightly sweet soy sauce until the flavor penetrates all the way through the yolk."
