This popular ramen shop in Minato City, Tokyo often has a line of customers waiting. The pork / seafood broth uses no artificial seasonings at all, only domestic raw pork bones, niboshi sardines, and dried bonito. A ramen restaurant in Higashi-Ikebukuro which was opened by the owner, who ran an Italian restaurant, after he fell in love with ramen and trained at several ramen shops. The restaurant's niboshi dried sardine broth, made with dried horse mackerel and several varieties of sardines, goes well with its thin, straight-style noodles. One of the most popular items on the menu is the horse mackerel nibo soba. Kombu kelp is added to the simple seafood broth to give it extra viscosity and enable it to cling to the noodles better. In addition to standard toppings like chashu roast pork and yamakurage, fragrant yuzu leaves are particularly popular with women. The restaurant offers different, day-of-the-week ramens and also holds special discount days such as Office Worker Day and Women's Day.

    Tokyo Shinjuku-ku Takadanobaba 2-1-4
"This famous additive-free seafood and tonkotsu pork bone ramen restaurant is located in Takadanobaba. Customers love the complex flavor of the restaurant's rich ramen broth made by combining a slow-stewed pork and chicken bone broth with a flavorful seafood broth created using smoked mackerel and dried bonito shavings. The restaurant's medium-thick noodles are made in-house using several varieties of lye water from Mongolia; the extra-thick menma fermented bamboo shoots used as a topping add both a pleasant texture and visual impact. One particularly recommended topping is the ""ajitama,"" a gooey soft-boiled egg marinated in an ever-so-slightly sweet soy sauce until the flavor penetrates all the way through the yolk."

One of the great things about the place is that it's open until 2 a.m. The restaurant's signature dishes are its old-fashioned ramen made with a dried sardine-based broth, and its jumbo gyoza pot stickers. The restaurant puts particular effort into its broth, blending dried sardines from a variety of fishing ports in the aim of creating the ultimate niboshi ramen. Customers can specify not only the amount of noodles they want but also how rich they want their ramen broth to be. In the summer, the restaurant also serves hiyashi chuka chilled noodles.

The popular ""Ladies' Set"" features a small serving of fried rice, gyoza dumplings, and a half-sized bowl of ramen."

The setting of countless iconic movie scenes and the inspiration for songs, poetry, and literature worldwide, Tokyo barely requires an introduction.
