    Kikutei Local Cuisine is a soba noodle restaurant operated by Mitsuoku-ya, a pickled vegetable shop founded in 1948. To reach it, visitors should proceed along National Route 13 from Sawayaka-bashi Bridge along the embankment of the Mogami River. The building is a repurposed traditional private house built in “chumon-zukuri” style with a thatched roof. The spacious interior, with its hearthside and tatami rooms creates a mood that makes customers feel as if they are visiting a friend’s home. Takahata Folk Museum is housed inside the same building and displays tools that were used in everyday life. The restaurant’s noodles are made with 100% buckwheat flour grown in Yamagata Prefecture. Other appealing dishes available at Kikutei include local specialties, such as stew made with wild plants or hiyajiru (chilled miso soup), and Gyudon (beef on rice) made with Yonezawa beef, so that customers are able to sample a wide variety of Yamagata cuisine. Kikutei is closed for the winter from early December to May.

    This soba shop is about a 15-minute drive from the JR Oishida Station. Established in 1926, this popular historic shop is filled with customers, both women and men, of all ages. Customers can enjoy nihachi-soba noodles, made from stone ground buckwheat and wheat flours. The broth, made from a variety of bonito flakes, has a refreshing slightly salty flavor which leaves you wanting more. Not only is the hot soba popular, but the cold zaru-soba, the tempura, and even the ramen noodles are well liked.

    About 10-minute drive from the JR Oishida Station, this soba noodle restaurant is the first soba shop along the Okunohosomichi Obanazawa Soba Highway in Obanazawa City. It is a leading buckwheat producing area within the prefecture. Here, one can enjoy Nihachi soba, a variety made from a special brown buckwheat grain produced locally. This early maturing high-grade Wase grain, which is only slightly polished keeping the hull, is freshly ground, freshly kneaded, and freshly boiled, making a flavorful aromatic pasta. The ita-soba, eaten with home-grown freshly squeezed bitter daikon together with some squid tentacles tempura is highly recommended. Only the Edomae variety of tempura ingredients is use. The juwari-soba is also very popular but is limited to only 20 orders per day, as the buckwheat flour is ground using a hand operated millstone.

    お蕎麦はコシがあり食感も良いし美味しい。お店のなかも広い御座敷でゆっくり食べれます。店員さんの対応も良かったです。天ぷらもボリュームありました。お蕎麦に付いてきた卵焼きが甘くて大変おいしかったです。今度単品で頼みたくなりました。

    About 10 minutes for the JR Oishida Station, this soba noodle restaurant is the third soba shop along the Okunohosomichi Obanazawa Soba Highway in Obanazawa City. It is a leading buckwheat producing area within the prefecture. One can enjoy the chewy soba noodles with a delicate aroma made from local Obanazawa buckwheat flour. The most popular dish is the squid tentacles tempura with cold soba noodles. This voluminous dish is a perfect combination of the freshly fried squid tentacles and soba noodles. Ramen is also offered, and other dishes, of which, the chashu ramen is highly recommended.

    About a five-minute drive from the JR Yonezawa Station, this handmade soba noodle shop is known for its freshly ground, freshly kneaded, and freshly boiled noodles. They use only quality inspected domestic unpolished buckwheat that is home ground together with a chemical and additive-free broth that keeps the customers coming back for more. The tori-chuka noodles topped with their famous broth and the ita-soba, which comes in a wooden box, are well worth trying. The local specialty, kaimochi or also called sobagaki, is buckwheat flour mixed, topped with natto and egoma wild sesame sauce. This delicately sweet egoma sesame seed sauce can only be enjoyed here.

    山形では蕎麦だ。ということで米沢のホテルで聞いたら、教えてもらったうちの1つ。板蕎麦を食べた。地方の蕎麦だ。少し太いし、つゆも江戸前と比べる少し薄いか?楽しめそうなメニューがいっぱいだ。

    Just 20 minutes by car from the JR Oishida Station, this handmade soba noodle shop is affiliated with the Oishida Soba Highway where soba shop owners have come together to build local pride in their ability to make great soba. Some call the soba of this area hoshi-soba, 'star soba', from the fact that the nihachi type of soba noodles made here are made from the locally produced aromatic, rather course buckwheat flour, and the black specks seen in the noodles look like stars. These soba noodles are traditionally dipped in the local specialty broth, Kiji-jiru, which is made with pheasant meat, grated onions and radish. Although quite strong in flavor, the broth is favored even by women because it doesn't leave an aftertaste. For those soba gourmands, the kaimozu (soba-gaki) is also recommended.

    4月でしたがまわりは銀世界が広がってました。蕎麦はこれまで食べたことがないくらいこしがあり美味しかったです。追加できじ汁を頼みましたがくせも全くなくこれまた美味しかったです。ここ 蕎麦ときじ汁は食べないと人生損してるくらい絶品でした。

    バスの待ち時間があったので、この店を利用しました。肉そばが人気のようでこれを注文しましたが、店員さんに尋ねたらちょっとボリューム不足を感じるかもしれないというので、天丼とセットのランチにしました。特別に特徴もないようですが、使い勝手のよい場所にあるので、お客さんは多いです。そばはつなぎが多いようで、のど越しがツルツルしています。出汁とのバランスは良いと思います。
