    Yamagata Pref. Yonezawashi Asagawa 1314-16
Established in 1972, this ramen purveyor is a one of the quintessential of Yonezawa ramen, for which many customers stand in line to enjoy. The shop has their own noodle making factory, and while seated at the bar one can watch noodles being made. The broth, which enhances the noodles, hand-kneaded prior to boiling, is made of chicken and dried fish simmered for hours to perfect the flavor. The not too heavy robust flavored soy based chuka-soba is served the traditional way with chashu-pork, naruto, and memma slices. The resilient, thin, crimped noodles are a perfect complement to the broth. The shop closes for the day when the broth runs out.

This ramen shop, established in 1960, serves up flavors loved by the locals. The flagship dish is the wonton noodles with melt-in-the-mouth wontons in chicken bone and dried fish stock soup. Also popular is the Mangetsu dipping ramen with a choice of two of three kinds of soup—limited to only 20 portions per day.

More often than not there is a line of people waiting to enjoy the ramen at this ramen shop, which is continuously listed in the top popular ramen shop rankings for the Yonezawa area. This eatery is pleasant with a sense of cleanliness, has comfortable tables and slightly higher than normal chairs. When crowded, parties often share a table. The broth is not oily or heavy, balancing portions of vegetables, chicken, and dry fish well, and the noodles are hand kneaded, thin and al dente. The top menu orders are chuka-soba, with the traditional chashu pork, memma, and naruto toppings, and chashu ramen. Other options offered are such soy broth based, bean sprout ramen, wakame ramen types, and also miso or stir-fried vegetable ramens.

    Yamagata Pref. Yamagatashi Honchou 2-3-21
An 18 minute walk from the east exit of Yamagata Station. A ramen restaurant which invented chilled hiyashi ramen, a Yamagata specialty. Inspired by a brief comment made by a customer, the restaurant’s original owner first began offering hiyashi ramen in 1952 after much trial and error. The fat in the broth doesn’t congeal despite being chilled, and this soup, perfect for enjoying in the heat of high summer, is both light and yet rich in flavor. It’s so delicious you’ll want to drink every last drop! The crisp bean sprouts and cucumber o top add a nice accent.

Established in 1965, this restaurant is reputed for its Chinese noodles with a thick soy sauce soup accentuated with garlic and using a luxurious amount of beef fat. The Yonezawa beef tendon rice is also popular and can be a take-away dish. The restaurant closes when there is no more soup so you should try to get there when it opens. It is around 11 minutes on foot from JR Yonezawa Station.

About a five-minute drive from the JR Yonezawa Station, this historic ramen shop is known for its flavorful soy sauce based broth, and may be said to be the home of Yonezawa ramen. This clear broth, made painstakingly by combining Yonezawagyu beef bone, chicken, and pork, is the perfect combination for the crimped super-thin chewy noodles. The chashu ramen topped with a good helping of local Yonezawa tengen pork ribs and thighs, is recommended. In the summer, one can enjoy the hiyashi chilled noodles with a refreshing bonito based darker broth.

Yamagata Areas

around-area-map

Although often overlooked, Yamagata prefecture by no means lacks appeal: the Yamadera temple trail through the mountains, deliciously tender Yonezawa wagyu, and over 100 steaming hot springs, most notably Zao Onsen, await visitors. When winter comes, the snowcapped peaks become dotted with skiers by day and onsen-goers by night, while summer brings the celebration of juicy Yamagata cherries.
