    Kojimaya Souhonten, said to be the birthplace of local specialty Hegisoba, located in Nakayashiki, Tokamachi City, Niigata Prefecture. Hegisoba is a type of soba that is served in a wooden dish called a hegi. Funori seaweed is added to the homemade buckwheat flour ground on a millstone to make this popular Niigata specialty. The restaurant serves a variety of dishes from bowls of noodles to more formal dishes, priding itself on always sticking to the three principles of freshly ground, freshly kneaded, and freshly boiled. A popular dish on the menu is their seasonal Tenbara-zen served with a large portion of kakiage (mixed vegetable and seafood tempura). There is also an area in the restaurant which introduces the history of the biggest water mills in the prefecture and the story behind hegisoba.

    This restaurant continues to offer the same Kanchu Hikinuki Soba, made from buckwheat flour ground in the coldest winter, as was offered to the Shogunate at the close of the Edo period. The soba from Yamagata and Hokkaido is ground in the water-wheel mill and used fresh in handmade noodles on site. Their ramen Tori Chuka, made with Japanese broth and chicken, was once a staff dish that was only available to a few, but now is a hugely popular dish on regular offer.

    Here is famous for tori soba. If you visit yamagata prefecture must enjoy local noodles. Although here is always long queue. You should visit between lunch time and dinner time.

Founded 100 years ago, their excellent Awaji Island Udon combines the firmness of Sanuki udon with the chewiness of Osaka udon. They've maintained the same flavor since the beginning, taking pride in their healthful broth. Their freshly made kama-age udon noodles are only available at lunch. The most popular item on the menu is their Blooming Onion Tsukemen with fine, wavy house noodles and an entire onion blossom soaking in their naturally flavorful dipping broth.

The soba noodle taste and color are prominent due to the hand-crafted stone grounded flour used to make them. The soup stock uses only four ingredients giving it a deep, rich, sweet flavor. Their seasonal soba are also incredibly popular.

    We enjoyed lunch here. The tempura was a highlight. The service is friendly and helpful. Well worth a visit if you are in the area.

It is famous for hand-made noodles called “Himokawa” which are made using the water of the Kiryu River and matured over a lengthy period of time. The menu includes dishes of noodles such as kake (noodles in soup), tsuke (with dipping sauce) and seiro (chilled with a dipping sauce). The most popular, Himokawa Curry Seiro is recommended, and is made using traditional techniques established over many years. The Himokawa noodles go perfectly with curry.
