This long-standing store in the heart of Matsuyama, Shikoku's largest city, offers Nabeyaki-Udon (hot-pot udon noodle soup), a local soul food. They use small dried sardines from nearby Iyo-Nada Strait and top-class kombu kelp from Rishiri, Hokkaido, to make the carefully guarded flavor of their secret broth which has remained the same ever since their opening in 1949. Their carefully made noodles are permeated with the flavor of their broth before being added to the broth in another pot where the domestically sourced meat is stewed, resulting in an exquisite flavor. Their menu has just two options, the Nabeyaki-Udon served in an aluminum pot, and Inari-zushi (a pouch of fried tofu stuffed with sushi rice). Despite this they've had endless customers ever since they opened. This popular shop is beloved by the locals.

"This udon noodle restaurant, located in Ikaho Town, Kita-Gunma County, is the founder of ""Mizusawa Udon"", said to be one of Japan's three great udon noodle types. The restaurant boasts more than 400 years since establishment. The store has been featured frequently in the media and famous people also visit. No machines are used in the production process at all and the udon is handmade in the original way. The udon made with time and effort has shine and a chewy characteristic. The menu offers only “Umudon / Zaru”, enjoyed dipped in the secret sesame sauce."

A restaurant serving homemade udon noodles located close to the Ginkaku-ji Temple in Kyoto City. This shop popularized “omen,” Gunma-style udon noodles, when they were not yet well known in the Kansai region when the shop first opened in 1967. The noodles, made with wheat from Joshu (old name of Gunma Prefecture), are flavorful, smooth, and chewy. The noodles are steeped in a slightly strong broth made with high quality kombu kelp and skipjack tuna and are served with sesame seeds, seasonal vegetables, and salty-sweet kinpira gobo (stewed burdock root). The restaurant also serves a wide variety of other dishes depending on the season, perfect for enjoying with a cup of sake or other drink of choice.

"This restaurant specializing in straight-from-the-pot udon noodles is located right in front of Fukuoka Airport. Founded more than 40 years ago, it is popular for the flavor of its carefully-crafted udon noodles and broth. Their menu includes udon noodles and rice dishes as well as plenty of tasty udon toppings. We recommend their ""goboten udon"" topped with crunchy burdock root tempura, the soul of Fukuoka, and their ""niku goboten udon topped with burdock root tempura and beef, which is their most popular item. We also recommend pairing them with their mixed rice with burdock root and chicken"

Located about 300 meters north of Togetsu-kyo Bridge in Arashiyama, Arashiyama Udon Ozuru is recognizable by its large paper lanterns. The restaurant carefully makes its own udon noodles, making sure to prepare only the amount that can be eaten in a single day. This udon is served with broth made from sliced mackerel, herring and bonito, with the addition of Kyoto-style ingredients such as wheat gluten, yuba (tofu skin) and green onions.

Udon is handmade! Chewy and springy! They do good tempuras too! I recommend you don’t order their set so you can eat two servings of udons!

A long-established udon restaurant founded in the middle of the Meiji period and said to be the originator of the Okazaki specialty kama-age udon (udon noodles straight from the pot). The udon noodles are especially chewy in texture and the broth is a closely guarded secret! Their miso-nikomi udon made with the local traditional Hatcho miso is popular with celebrities and many people alike. The nearest stations are Okazakikoen-mae Station and Naka-Okazaki Station.

This udon noodle restaurant in Kagawa-cho, Takamatsu City in Kagawa Prefecture is famous and has been featured on popular TV programs. It is known as a restaurant that always has a queue outside on weekday lunchtimes, not to mention weekends and holidays. The udon noodles are made very early every morning from a special flour which is a blend of a several different types and salt water and their characteristics are the smooth surface and strong firmness. Each freshly-cooked noodle has a prominent edge which gives a firm, al dente texture. The most popular dish is the Kakiage Oroshi Udon topped with a giant mixed vegetable tempura.
