    This venerable restaurant in Motoazabu serving traditional sarashina soba noodles inherited since its foundation of 1789. The elegant flavor has caused even an empresses and imperial households to order delivery from here. The shop's most popular item is of course its sarashina soba. Distinguished by its white color and excellent texture, this soba is made with ichibanko, the highest quality, which is ground only from the material at the very center of the buckwheat seed. In addition to the sarashina soba, the restaurant's seasonal sobas, mixed with ingredients such as Japanese mugwort, perilla, kabocha squash, and yuzu are quickly gaining prominence.

    Found the food to be amazing tempura extremely tasty. The white soba was fantastic. Highly highly recommend it and prices were very reasonable.

    This famous hand-made udon noodle restaurant located in Utazu-cho, Ayauta County in Kagawa Prefecture has been featured in many TV programs and travel magazines. It has many fans who come from in and outside the prefecture and it is known for having long queues. Based on the belief that udon must be made by treading with the feet over and over, the noodles, of which the restaurant is proud and created with just the right amount of treading, are superb with their gloss, flexibility and strong firmness. The flagship dish is Hiyaten Oroshi, a generously-portioned chilled udon bowl topped with two giant tempura prawns. It also sells udon to take home with you.

    This restaurant continues to offer the same Kanchu Hikinuki Soba, made from buckwheat flour ground in the coldest winter, as was offered to the Shogunate at the close of the Edo period. The soba from Yamagata and Hokkaido is ground in the water-wheel mill and used fresh in handmade noodles on site. Their ramen Tori Chuka, made with Japanese broth and chicken, was once a staff dish that was only available to a few, but now is a hugely popular dish on regular offer.

    Here is famous for tori soba. If you visit yamagata prefecture must enjoy local noodles. Although here is always long queue. You should visit between lunch time and dinner time.

    Ganso Kawara Soba Takase is a restaurant in Toyoura district, Shimonoseki City that is reputed to have been the first restaurant to serve Kawara Soba (Soba noodles served on a heated Kawara tile). Kawara Soba was originally developed by Takase Shinichi (the first-generation owner), inspired by the story that, during the Satsuma Rebellion of 1877, hungry solders heated Kawara tiles to cook wild grasses and meat; this dish has subsequently become very popular. The restaurant's Unameshi (steamed rice with eel), made using domestically-produced eel, is also very popular.

    Hidden away in the mountains around Manno Town, Nakatado County, Kagawa Prefecture, Yamauchi is a famous udon restaurant frequented by up to 300 people a day on the weekends and holidays. The udon noodles, painstakingly made by the restaurant owner and cooked in a large pot over a wood fire, have a firm texture with a nice bite to them. Their broth, with flavors of dried young sardine coming through, and locally sourced tempura are also very good. Yamauchi’s hiya-atsu udon with piping hot broth on cold noodles is a popular choice.

    I ate Udon. That was very nice taste. Udon is different taste by soup and noodles. I like this restaurant’s Udon taste!!

    This soba noodle shop is located on Prefectural Route 4 at Akagisan in Gunma Prefecture. It has a relaxed, Japanese-style atmosphere with a structure that gives it the feel of an elegant Japanese restaurant. They make their own noodles, mill their own flour, and even grow the buckwheat themselves. They use spring water for the soba, pumped up from 100 meters below ground. The noodles come in 180, 360, and 1,800-gram portions heaped on a large noodle tray so you can share with a number of people.

    Kojimaya Souhonten, said to be the birthplace of local specialty Hegisoba, located in Nakayashiki, Tokamachi City, Niigata Prefecture. Hegisoba is a type of soba that is served in a wooden dish called a hegi. Funori seaweed is added to the homemade buckwheat flour ground on a millstone to make this popular Niigata specialty. The restaurant serves a variety of dishes from bowls of noodles to more formal dishes, priding itself on always sticking to the three principles of freshly ground, freshly kneaded, and freshly boiled.     This is a long-established soba restaurant located approximately 10 minutes on foot from Hakone-Yumoto Station on the approach to the Yumoto-bashi Bridge. They are famous for their Japanese yam soba noodles made only from buckwheat flour, locally-produced eggs and Japanese yams without using water and flour, and it is such a popular shop that lines form during peak time. Popular menu items are their Seiro-soba, unchanged since long ago, and Teijo-soba which is topped with grated Japanese yams. Their soba is exquisite, full of sweetness and the original flavor of the soba, and it is known for its noodles that do not soften out even after time passes thanks to the use of Japanese yam as a thickener.

    Visited this wonderful restaurant on my way to Hakone. The soba was magnificent and very reasonably priced, the tempura was also delicious ! Words cant describe what a delightful experience this...
