Ishikawa Pref. Hakuigunshikamachi Saikaifuto W 6 6 Saikai fishing port premises
A sushi restaurant located on the grounds of the Saikai Fishing Harbor. The restaurant's name indicates it is a conveyor belt sushi place, but in place of an unending conveyor belt of sushi rolling past, customers make an order via a touch panel at their table, after which a sushi chef quickly prepares their order. Directly operated by a fisherman's union, the restaurant uses fresh seafood caught and brought into port that day. Only salmon and mackerel caught in the waters off Saikai, in particular, are used, no imports. The restaurant's menu also includes many distinctly local sushi toppings such as thread-sail filefish, whelk, and neon flying squid.

"The Kanazawa Hyakubangai location of Shibazushi, a sushi restaurant established in 1958. Created by founder Tadashi Kajitani, the restaurant's namesake shibazushi has an elegant flavor; inheriting the traditions of Kanazawa-style oshizushi pressed sushi, shibazushi consists of sushi rice made with select rice and water topped with fresh seafood which is then wrapped in a bamboo grass leaf. The restaurant's staple menu selection is its simply flavored horse mackerel shibazushi, which is made with fatty domestic horse mackerel over minced ginger. The restaurant also makes use of seasonal fish like sea bream and horse mackerel. In addition, the restaurant offers a monthly changing selection of bento box lunches as well as the ""Zeitaku Noto-gyu to Noto-buta Bento,"" a bento box which comes with both Noto beef and Noto pork."

"Located in the Omi-cho Market, this sushi restaurant is the sister establishment to Sushi Mitsukawa, a restaurant located in the Higashi Chaya District which has been awarded a Michelin star. Here you can enjoy authentic sushi in a casual atmosphere, and, from the counter seats, you can observe the superb skills of master sushi chefs. The restaurant also has table seating, ensuring families and small groups can also eat comfortably here. In addition to a la carte orders prepared one at a time using your favorite toppings, the restaurant also offers lunch specials and an omakase (chef's choice) course prepared with fresh, seasonal seafood focusing on whitefish varieties. The restaurant particularly recommends the ""Ni-Hamaguri,"" common orient clam simmered in a salty-sweet sauce Tokyo-style; and the ""Akanishigai,"" sushi made with veined rapa whelk which can only be obtained from the fishing port in Nanao City in the Noto area."

"A sushi restaurant located next to the Gansho-ji Temple. Situated in a back alley, this renowned restaurant has even been featured in the media. Close to Nanao Station, the restaurant sometimes sees lines forming out the door during lunchtime. The restaurant's sushi toppings come straight from fixed shore nets. The menu is the same for both lunch and dinner. In addition to choices like the ""Osusume Nigiri 8-kan"" recommended eight-piece sushi set, the ""Taisho Tokusei Saba Battera"" pressed mackerel sushi, and the ""Kaisen Hitsumabushi"" chopped seafood over rice, the restaurant also offers all manner of makizushi rolls, sashimi, and tempura assortments. The steamed northern shrimp sushi is popular with women. The weekday lunch special is particularly recommended. A bargain choice, it comes with two small side bowl dishes, salad, miso soup, and your choice of either eight nigirizushi pieces or a seafood rice bowl."

A restaurant which uses almost exclusively local ingredients where you can enjoy the uniquely fresh sushi of the sushi wonderland that is Nanao. The restaurant takes pride in its nigirizushi made with toppings prepared to maximize their flavor and served over a bed of sushi rice somewhat smaller than usual. In the counter seating area, customers can watch the restaurant's chefs prepare their sushi right in front of them.
