    A restaurant which uses almost exclusively local ingredients where you can enjoy the uniquely fresh sushi of the sushi wonderland that is Nanao. The restaurant takes pride in its nigirizushi made with toppings prepared to maximize their flavor and served over a bed of sushi rice somewhat smaller than usual. In the counter seating area, customers can watch the restaurant's chefs prepare their sushi right in front of them. The restaurant also has tatami mat and raised tatami mat seating and can accept reservations for private parties from six to 20 people. Particularly recommended is the omakase (chef's choice) menu, made with a seasonally varying selection of mostly local seafood. In addition, the restaurant has a side menu which includes sashimi, grilled fish, stewed fish, and other delicacies, and also carries a variety of alcoholic beverages.

The restaurant is a participant in the ""Hyakumangoku no Sushi"" project, which aims to serve ultimate pieces of sushi created using carefully selected ingredients by the hands of skilled chefs thoroughly versed in the culture of Ishikawa. The sushi crafted by the owner, a master who has worked with sushi for over 30 years, is renowned not only for its freshness but also its size. Particularly recommended are the blackthroat seapearch, a high quality whitefish which is nevertheless characterized by its rich and flavorful fat, served shioyaki (salt grilled) and ichiyaboshi (salted and dried overnight) style; the homemade kaburazushi turnip sushi and kobujime konbu kelp sushi, only served in winter; and the vinegared whitebait sunomono.     This trout sushi specialty shop located between the Toyama City Tram Line's Nishimachi and Kamihonmachi stations uses only the highest quality ingredients. For their sushi rice, they use Koshihikari rice grown in Toyama Prefecture. For the salt used to enhance the flavor of the sushi, they use Mongolian rock salt. Their soup stock is made with Rausu konbu seaweed from Hokkaido, which contains more umami than regular konbu. Their filling, thick-cut trout has a pleasantly soft texture. Taste of the flavorful trout fat so abundant that it soaks into the sushi rice. Customers can choose between single and double-layered trout sushi.

Founded over 130 years ago, its steamed sushi and nigiri sushi made with local Kuwana clams raised in a perfect environment with a blend of sea and fresh water are local favorites. This especially goes for their original steamed sushi, with clams marinated in their secret house sauce and broiled, laid on sushi rice, and set on thin sliced omelet before being steamed together. The clams' savoriness transfers to the rice and really whets the appetite. They've appeared widely in the media, and reservations are recommended.

    This long-established sushi restaurant founded in 1951 is one of the best in Matsusaka. The marker for the shop is the large wooden 寿し萬 signboard. The shop is arranged with the atmosphere of a simple good old sushi shop. Their ingredients are mainly local ones from the Iseshima area including Matsusaka. The owner's recommendation are raw beef nigiri sushi using marbled Matsusaka beef, conger eel sushi prepared with traditional methods, and inarizushi (sushi rice wrapped in fried tofu).
